Christmas Camping

We are now approaching our second "Christmas in Camp" and looking forward to the quiet season that goes along with RV Life during this time of year. While we enjoy the business of the regular season and the wonderful guests that frequent our RV Park, Winter is just as special in a different sort of way. Our Full Time RV Life didn't begin with really any planning or forethought. It began with the purchase of an RV Park where we decided to live for a short time in the existing owners apartment residence. After a year and the hiring of a full time Park Manager, we suddenly had placed ourselves in a rapidly approaching "homeless" situation. Since our manager and her husband would be moving into the apartment we had been occupying, we needed to find a solution quick!

During the stress of trying to figure out do we buy or rent something, Shelley suggested, "We own a campground, lets get a camper and just pick a nice spot until we figure something else out." A week later, we were full time RVer's.

Part of what made the decision easy was being near other full timers in our camp and seeing their easy going, simple lifestyle. Many were full time Workampers for us and others were just living the Full Time RV life and, seemingly, enjoying it immensely.

I think the most appealing part of the life was perhaps the sense of community that develops in a campground among the full timers. The typical "large" RV may only be a couple hundred square feet of living space. This naturally results in finding ways to extend the living beyond the walls of the camper. The immediate space of the site is the first "expansion living space." After that, the central fire pit, the office coffee and pastry station, The pool area and then the pavilion all make up part of the connection to the Camp Community.

When that much outside interaction is taking place, a sense of family develops very naturally. In our camp, the full timers have decided that it is important to gather for meals on a monthly basis and take in the local shows, attractions and entertainment together. (Did I mention that we are situated just on the outskirts of Branson MO with it's hundreds of tourist destinations) The frequent meals and gatherings typically include invitations that are extended to the many part timers and even many of our nightly guests. This extends the camp family experience to others. Often times the food part of the experience is accompanied by a music gathering as well!

But back to the Christmas Season. This year there seems to have been an extra effort in camp to adorn the campers, many of the buildings, the treehouses and cabins, random trees and other unsuspecting structures with Christmas lights. When driving through camp this season, there is definitely a festive atmosphere on display.

This morning I made my way to the office for coffee and a donut. Randy already had a nice warm fire going in the community fire ring. Kim, his wife who is also our office manger arrived soon as did my wife Shelley. A couple of our workampers stopped by as they were preparing to travel back home to Michigan for Christmas with their family.

Others drifted in and out of the warmth of the campfire either out for a walk or tending to camp business. Today, the fire even included some of the show ticket people from town who were bringing this weeks show specials to the office. Soon we will be hearing the Saturday version of the two Silver Dollar City Steam Trains as they carry guests in the colorfully lighted Christmas Train rides. Once evening arrives the sound of Christmas Carols will echo through the woods and into camp from the giant musical Christmas tree there.

Do I like Christmas in Camp?

I like Camp period!

Christmas is just a special time in camp and an experience that one should not miss! Even if it's just a weekend.

Another Treehouse in the Inventory

We were able to complete our most recent treehouse cabin just in time for the Thanksgiving weekend, this year (2016).  We had a "Free Night in the Trees" contest to come up with the name for this treehouse. The winning submission was "Belle Arbres" which means Beautiful Trees. Since this cabin is situated over a hill down in the trees, It was a good name.

Treehouse building is just one of the many enjoyable parts of the Camp and Cabin Lifestyle. To me there are very few life pursuits that would offer as much opportunity for a leisurely life with options for creative expression.

A few years ago, I decided to coin the term "Martin and Shelley's Big Adventure" for what Shelley and I did for a living. Since camps, campers and cabins (including treehouse cabins) makes up about 90% of life for us, you can imagine that it is indeed a big adventure! I'm not sure why it took us until our 50's to figure out that a life of adventure is far superior to what we did before.

Nevertheless, here we are, living a full time RV life in camp, carving out a life by sharing our passion and interests with guests who visit our various cabins, camps and resorts. My encouragement to everyone that I meet is to pursue your dream. If that dream involves camps or cabins, then you've chosen a good one!

War Horses at Rest

They deserve a break. Both our war horses worked hard today
ferrying our gallant customers to and fro upon Lake Taneycomo,
where they vanquished many-a-fish on this fine day in Rockaway.
The caption with the boats is just a little bit of "Craig Lingo". He cracks me up. If I can EVER get him to commit some of his poetic ways to these blog postings I know you will fall in love with it.

The work horses are, of course, our boats at the Rainbow Haven Resort and Marina. The gallant customers were a group of fishermen who frequent this area every single year. Fishing by day watching the game by night from both inside and outside.  Guys, boats, fish and football.....

Try it sometime...... They certainly seem to enjoy it!

A Treehouse.......When Nothing Else Will Do!

I have people ask me all the time, "What do you do for a living?" I LOVE that question. My answer is that I never figured out what I wanted to do so I decided to grow up and be a kid! When I get the quizzical look that usually follows, I reply with " I build treehouses for a living!" And it's true, But, They're not the childhood, back yard type of treehouse forts where you could stage a respectable defense in a green apple or walnut fight!

No, these treehouses are the grown up "adult version" treehouse that will either inspire romance or adventure, or perhaps both! Our treehouse cabins are designed as romantic or whimsical. I guess that's a good way to describe them. The romantic cabins have fully functional bathrooms, kitchenettes, jetted tubs for two, flat screen TV's with satellite, private decks, tree decks connected by swinging cable bridges, some have fireplaces and even outdoor showers (part of the Adventure!) Okay, they are private outdoor.........or at least semi-private outdoor showers.........Or at least private from peoples point of view. Birds and squirrels may see you!

Some of the treehouses (Ben's Hide Away for example) are built more for fun and big groups. It boasts three treehouse cabins on one site with the entire site being dedicated to just one group at a time. Each treehouse sleeping up to five in beds. We also allow tents to be pitched on the site extending the number of guests that can occupy this site at one time.  No indoor plumbing here but there is an outdoor fully functional restroom and outdoor kitchen with private showers just a few feet away. (The swimming pool is just a few feet away as well much to the delight of the kids who stay there!)

When ONLY a treehouse will do, we have the treehouse for you. As we continue building, we will be adding new levels (and heights) to the fun and adventure!

Campfire Chocolate Cake

A few postings back, I presented my KISS (Keep It Simple Silly!) version of Dutch Oven Biscuits and Stew. As it turned out, it was by far the most popular posting of this blog. I'm not sure if it was because of the looks of it in the oven was so delicious looking or if it was in it's simplicity!

I'm going with simplicity (even though it IS delicious too) But in keeping with the "simple" theme, here's the perfect dessert! Dutch Oven Chocolate Cake! Of course you may need to invest in a second Dutch Oven.......can't see a problem there!

SO here it is

Dutch Oven Chocolate Cake Ingredients

1 16 oz package chocolate cake mix
1 3.9 oz package instant chocolate pudding
1 1/2 cups milk
1 1/2 cups semi-sweet chocolate chips

     Lightly oil or spray 12 inch Dutch Oven; line with parchment paper if desired.
     In large bowl, whisk milk with pudding mix until thickened.
     Stir in cake mix; mix until well combined, batter will be thick.
     Spread batter in prepared Dutch Oven.
     Sprinkle evenly with chocolate chips.
     Bake for 30-35 minutes or until edges pull away from sides.
     Allow to cool before lifting from oven with parchment paper.

Remember that cooking with a Dutch Oven requires the oven to be placed over hot coals but not directly in the fire. The lid has a lip to contain hot coals placed on top. Check the contents periodically for progress.

Autumn in Camp

I realize that you may be reading this at some point in the future when it's like 104 degrees in the middle of July, or 28 and in the middle of January. But right now....It's 58 and early October where we are. It's early enough that it shouldn't be quite this cool, but a rain and a cool front came through last night making it legitimately feel like fall.

I don't know what else to say that the picture doesn't already tell you. Fall seems to be EVERYBODY'S favorite time of year for camping. When you Full Time it, there's never a lack of opportunity to enjoy a nice fire, maybe some s'mores, some prefer a glass of wine or steaming cup of coffee or tea! You really don't need a special occasion. Grab a chair, build a fire, breathe in the cool autumn air,enjoy the smell of the fallen leaves and look up at the stars. This time of year, even they seem to be brighter!

If you haven't been infected by the camper/RV bug yet, there are always cabins available that will give you the same experience. We have a hard time deciding which we like best, campers or cabins. One of our annual traditions is to head over to Cross Timbers Cabins in the fall for a couple days of leave raking and clean up. Even though it's only about 20 minutes away from the Campground, we always spend 2 or 3 days there. We rake and clean up around the cabins during the day, enjoy a campfire in the evening and then slip into the Jacuzzi tub at night! I guess you figured out that we time our trip to the cabins when cabin 3 is available! The leaves will always be there!

I suppose that no matter what season you're in when you read this, a camper or a cabin will always be in season. Check our Websites to reserve your next big adventure!

A Tiny Cowgirl in Camp!

You never can tell exactly what might be going on in camp from one day to the next. This little cowgirl was part of some fabulous entertainment around the campfire. She's part of the Lindsey Family (I think the littlest part) Nothing little about the talent THAT'S for sure!

The Lindsey Family graces us with their family talent and their family friendliness each year and we are honored to enjoy their company!

Night Noise

I hesitated even writing this post simply because I don't want to give the wrong impression of camp life. In our case, we get to experience some wonderful night time sounds without the obnoxious "wake you in the middle of the night" intensity. Of course there are the usual crickets, the occasional whippoorwill and the rustling of leaves caused by who knows what.  All of that normal camp life fare is to be expected and very normal. However there are a few of the "Night Noises" that will bring a quiet smile to my face in the darkness of the camper when I hear them out the window net to the bed.

The first is the interesting assortment of owls that inhabit the woods around camp. While I've tried. I've not been able to record any of them successfully. The only thing I've been successful with while trying to capture owl noise, is to work myself up to being completely awake. I've had to resort to youtube videos to give you the sense of what the different owls are like. The Barred Owl is the most common around here. Occasionally I'll here a Great Horned Owl in the distance. Their call is usually a lot softer than it is in the video.

The second night noise that brings on a smile is that of the local coyotes. They never venture too close to camp and I assume when I hear them they are probably a half mile away. Never too close to wake me up, but wen I'm at that half asleep, half awake stage, it's a sound that will put me the rest of the way asleep.

Finally, and this one is going to sound totally weird, is the train that passes a couple miles from camp. I've figured out that it does not run every night, and almost never during the day. It starts with a very faint almost inaudible hum of diesel engines. It's so faint tat it can barely be distinguished from the other night noises. It's a little more noticeable when the train is travelling up the valley and less when rolling down the valley. Soon, it will let out the brief warning at the single crossing close enough to be heard from the camper. I have yet to get through that moment without breaking out into an unseen grin in the darkness.

"Don't Judge Me" Camp Stew and Biscuits

If you are a camp (or more specifically) a Dutch Oven "purist", you may not be able to cook this recipe! At least not in good conscience! BUT.......If you can get past all of that and want some FABULOUS camp cooking, you have to try stew and biscuits - The EASY way!

We learned this years ago. Like maybe 35 years ago, camping with all of our friends and all of our kids and all of their kids!. "Really Easy" for us was not even easy enough. The one semi complicated thing about this recipe is the use of a Dutch Oven and an actual campfire with coals which requires some skill but not much.

Dutch Oven cookery requires campfire coals (or charcoal in a pinch). The idea is that whatever is in the Dutch Oven gets cooked from beneath and from above by placing the oven over coals on it's iron feet and then placing coals in the lipped lid for the baking part. The skill that comes into play is that until you become proficient at this method, getting the top and bottom heat just right takes some practice.



For this recipe, you will want cans of Dinty Moore Beef Stew (remember, we're not judging here!) and some cans of "pop" or "Wompum" biscuits (remember, we're not judging here!) get as much as your crowd or your oven will hold!

Are you ready?

Empty the cans of stew into the Dutch Oven to about half way full
Cook over the fire until the stew is bubbling
Place biscuits one layer deep over the entire pot of stew
Place Dutch Oven over some hot coals but away from the main fire
Place hot coals on the lid of the Dutch Oven
Carefully lift the lid occasionally to check on the progress of the biscuits

When they are done....Serve 'em up!

You won't judge me after you've eaten a plate full!

You will seldom enjoy such a delicious and hearty camp meal!

Working in the BIG Office!

When I use the term; "The BIG Office", obviously, it's painting with broad strokes regarding the fact that the word office relates to something close to work. The "Big" part relates perfectly though as here I am, sitting in the biggest office you could possibly find!

Camper Life (by necessity) changes your perspective on all kinds of things. Work being one of them. Since a good portion of my "Work" (I use that term very loosely as well) consists of tapping away on a computer, work can occur in very interesting environments......or.......offices! My designated offices have included a lawn chair under the camper awning, a lounge chair and table by the pool (see below), a spot next to the campfire.... You get the idea.

The RV or Camper Lifestyle was one we stumbled into unintentionally about 5 years ago. Now that we've acclimated to it, I'll have a really hard time going back to a permanent foundation!

We are surrounded by a number of "full time" or "lifetime campers". The one thing they all seem to have in common is the ability to scale life back in the "stuff" category and scale up the enjoyment of simple things in life.

My office selection of the day is just one of those little perks of the RV life. The best part is that it's not necessary to waste my camping time taking care of work related things. I'm dragging all my work related things right into the camp setting. And to be honest.....it's the most relaxed and casual work environment I've ever experienced!

Cabin Memories

I was pleased to see and hear about a family who had chosen to stay at The Cabins this week. By their second day, they were busy texting their fishing pictures to Craig and he was busy sending them to me.

These are the stories I love the most. There's a lot of reasons to be in the cabin business but you are looking at the #1 reason right here! Something in me can't resist creating an atmosphere for families and kids to have the time of their life. I would wager that these will be lifetime memories for one and all!

Orange Peel Campfire Cinnamon Rolls

Amazing and Simple is the best way to describe campfire orange peel cinnamon rolls. (the name is more complicated than the process) If there is such a thing as being as complicated as rocket science, this would be the exact opposite of that. In fact the actual campfire may be the most complicated ingredient.

All you need is a pop open tube of ready made cinnamon rolls, an equal number of oranges, some foil and of course a campfire.

Cut the oranges in half and remove the orange fruit from the peel. (it's perfectly okay to leave some of the pulp inside the peel)

Place a cinnamon roll inside an orange peel half and place the other half back on top.

Wrap the whole thing in foil and place them in the coals of your campfire.

Depending on how hot the fire is, you will have to check them occasionally until the rolls have baked inside the peels.

When they are baked, remove the top peel and squeeze some icing onto the roll and enjoy them. The orange will add a nice flavor to the roll making this treat a special campfire experience.

The Camp "Family Room"

RV life has some really distinct advantages. Besides the obvious "sitting outside with a view of the woods while working on business from the computer", there is the more important element of family that develops with the other camp residents. In our camp, we have anywhere from six to twelve work campers at any time of the year. Plus, there are other seasonal campers that come and stay for a month or two or maybe all year. This group becomes our camp family and cannot stand it if there isn't something going on where they can all get together. Thankfully, (in my opinion) that often includes food! Anything from the campfire fish fry, to the campfire hot dog roast, to the campfire biscuits and gravy or the campfire Dutch Oven blueberry cobbler......... Are you noticing a trend here yet?

The campfire pit is the natural gathering place for our camp family. While food is a staple attracting force. Music does the trick too. In fact, there isn't much that happens around camp that doesn't work out best up around the campfire. Whether it's Pat, whittling on his walking sticks, Don playing his mandolin, or me just sitting there starring at the fire and drinking coffee, the campfire is our family room!

An Unexpected Adventure

2012 brought us the Hobbit movie entitled "The Unexpected Journey". I was sitting here thinking about our personal "Unexpected Journey" which began in 2011. Our journey began with the unexpected opportunity to purchase a small resort property in the sleepy little historic resort village of Rockaway Beach MO. It started in February, but by October, the journey had become an adventure. We moved our tiny little 23 foot travel trailer onto the site to begin renovations to the cabins. From the first day we began to experience the camp and cabin life. Our intention was to move back to our primary home by that fall. By fall..........we had fallen in love with the cabin and camping lifestyle.

Our camper was small, but served our needs perfectly. Our meals were a combination of outdoor campfire cooking, to BBQ grills, to smokers and camper kitchen (as in the fish fry to the left!) A Camper/RV lifestyle was being born and by October, we were HOOKED!

Fast forward from the original four cabins to a fifth one in October, to another resort with 8 more cabins by August, 2012, to another A frame cabin in 2012, Then an ENTIRE campground and RV Park (with 6 more cabins by the way) in 2014, to treehouse cabins in 2014, 2015 and 2016, to a Lake resort with marina in 2016....... Well, I'd say the camp and cabin life has settled in for good.

We hadn't lived in anything other than cabins or campers from early 2011 till late 2015. By that time, we simply surrendered to it and bought a 5th wheel camper as a semi permanent (or permanent permanent) form of lodging. The RV Living lifestyle has become our staple form of residence and you know what?    I'm okay with that.

As I sit here working on this article, I'm sitting outside under the awning in a light, late-summer rain. campers are coming and going along the road leading into camp. Even though we know it's still summer for another couple of weeks, we can smell fall in the air during the evenings. In our camp there is an "Eternal Flame" at the community fire pit near the pool and playground that I have no doubt is surviving this shallow attempt of rain.

Life can be complicated when dealing with so many cabins, camps, resorts and other related business. But there is a simple refuge only a step or two away from the camper front door!

Campfire Chili

This is a pretty good recipe for simmering over a campfire.

CAMPFIRE CHILI RECIPE

INGREDIENTS
2 lbs lean ground beef
1/8 cup of cooking oil or shortening to cover bottom of cooking pot
1 onion diced
1 red pepper diced
1 large jalapeno pepper diced
1/2 a bulb of garlic gloves minced
1 can diced tomatoes
1 15 oz. can tomato sauce
1 can black beans, drained, and rinse if you like
1 beef bouillon cube 1 cup water
1 package “Chili Seasoning”
1/8 cup of chives
1 tsp salt or to taste
1/2 tsp ground pepper

DIRECTIONS
Place beef bouillon cube in 1 cup of water to dissolve and set aside. Sauté diced onion, red pepper and jalapeno pepper in pot over campfire until onions are tender. Add the minced garlic just before adding the hamburger to the pot. Stir and brown the hamburger. Add salt and pepper to the ground beef. Add the can of diced tomatoes, can of tomato sauce, and can of black beans. Add chili seasoning packet, chives, and the 1 cup of beef broth stirring contents thoroughly. Stir and bring to a boil. Move to cooler area of grate to reduce heat, simmer until peppers are tender about 20 to 30 minutes.
You can add additional beans such as red, chili or kidney beans. I’ve added celery to the sauté, and poured in salsa or added a small can of corn. You can make your own chili seasoning using chili powder and cumin to taste. If too thick add a splash of beer.
Ladle into bowls and serve with cornbread, crusty bread or crackers. Dress up with sour cream, shredded cheese or diced raw onions. This chili can be served over cooked spaghetti noodles if bulking up on carbs.

The Daily Fog!

Even though we are nearing the middle of September, today started out at 75 degrees and was over 90 by eleven am. Here in Rockaway Beach, we have this wonderfully unique phenomenon that occurs all year long. In the summer, the water is always colder than the outside temperature creating some "natural" air conditioning for the valley. However, in the winter, the water is always warmer than the outside temperature, making the valley slightly warmer than the rest of the surrounding areas.

What causes this phenomenon? It began with the completion of the Table Rock Dam about 12 miles upstream from Rockaway Beach in the 1950's. Once complete, the dam began producing hydro-electrical power by drawing it's power supplying current from the depths of Table Rock Lake. This deep water maintains about a 54 degree temperature all year long. The water temperature moderates some as it continues downstream trough Taneycomo and then into Bull Shoals Lake. (Actually, all of the lakes are reservoirs on the White River) So, in the Summer, the 54 degree water cools the valley and in the Winter, the 54 degree water actually helps warm the valley.

The constant temperature is perfect for fishing. Especially for the dominant trout population in the lake. Brown and Rainbow Trout are the "staple" fish for Lake Taneycomo. However large numbers of Crappie, Bass and other sport fish are abundant as well.

What Does the Resort Lifestyle Look Like?

Craig and I headed out onto the lake today looking for Bald Eagles. There are quite a few of them around and it's hard not to see a few if you are out there for at least a couple hours. We only saw Blue Herons, but they are fun too. (my video skills are terrible, but we got an interesting video in spite of that) I asked Craig what he likes best, and true to form, he gravitated right to our guests and how much all of them mean to him.

Building A Campfire Bench For Two

This is just a teaser for a great project. I've built these for all of our cabins, resorts and campground. I've decided to do a video on how to build them at home. All I need is some time to go do it!

Campfire Cones

We discovered Campfire Cones several years ago while cruising the internet for some campfire recipes. Not being that creative when it comes to food, these things fascinated me. Not only was it simple, but they looked delicious.

The picture alone will tell you there is not much to these things. Mainly, any kind of ingredient that either melts in the heat or goes good with something that melts in the heat. All you need is some waffle cones, something tasty to put in them and enough foil to wrap them in!. Oh, did I mention a campfire! Technically you can make them in your oven, on the stove top (kinda) or in a barbecue grill. My recommendation is in a campfire!

Simply pick your favorite ingredients and drop them in the cone. Wrap in foil and toss in the fire. (near the fire) depending on your pyromania tendencies! Once they've had a chance to get hot and melted, pull them from the fire, peel them back and dive right in.

My favorite ingredients are mini marshmallows, peanuts, chocolate chips, white chocolate chips, or graham cracker chunks (if you're going for that "s'mores taste). There's no right way to do them. My wife uses fruit which to me is just wrong, but to each their own.

Enjoy them the next time you are building a backyard campfire or are staying at one of the cabins!
